Instructions#
- Beat 14 egg whites until slightly frothy. No need for stiff peaks — break the structure enough to incorporate air.
- Fold in diced peppers, chopped bok choy, diced oyster mushrooms, and diced onion.
- Add nutritional yeast, grated Parmigiano-Reggiano, and dulse flakes. Stir to distribute evenly.
- Pour into silicone muffin molds, filling each 3/4 full. Silicone is non-negotiable — egg whites bond to metal and paper liners permanently.
- Air fry at 300°F for 14-16 minutes. The lower temperature prevents the egg whites from turning rubbery. They should be set in the center with a light golden top from the nooch.
